The Quality Control is a fundamental cornerstone in the work of CLAS Pesto overseen by the Quality and Food safety departments.
Our quality assurance constantly monitors the products and processes inside the company.
The main focus is to guarantee qualitative excellence and security for consumer health by means of the constant perfecting of a quality culture and methodological approach to oversee each phase of the process.
The continuous investments in Quality Control made by CLAS are aimed at maintaining the highest degree of efficiency. CLAS has thus obtained the most important and strictest international certifications to guarantee its customers quality and safety at the highest levels.
Thanks to the Research & Development department every year we create more than 500 new recipes that allow us to guarantee a better product for the market, both the Italian and the international one.
The focus of the entire department is constantly aimed at improving consolidated recipes optimizing production and technological processes.
Both in 2018 and in 2019 we doubled our investments in R&D, as we believe that this sector is fundamental for our growth: every year we develop 300 recipes for our brand and for the private label, capable of satisfying new market trends.
We are also sensitive and attentive to the issue of food safety. We regularly organize audits at our suppliers of both raw materials and packaging with the aim of ensuring quality excellence and safety for the health of consumers. Quality and safety that are confirmed by the high degree of loyalty of our customers, with whom, in many cases, we have been collaborating for over twenty years.
We are equipped with an experimental laboratory for the development of tailor-made recipes, complete with a pilot plant that we use to test the productions. We have a marketing office that takes care of supporting you in the study and graphic design.

The passion for what we produce has pushed us to exercise maximum control over the entire production process.
We follow the entire basil supply chain: from the seed to the finished product, so we can process a fresh product in the factory, harvested a few hours ago.
The Protected Designation of Origin (PDO) is the European recognition that designates an agri-food product whose entire production cycle of the raw material takes place in a well-defined geographical area, not reproducible elsewhere.
All the production of PDO Genovese Basil is naturally developed in Liguria, as required by regulations, specifically in the plain of Albenga, Genoa and La Spezia.
After the basil cutting phase, the actual processing takes place which consists of some accurate washing phases that bring the raw material to an extreme cleaning.
After washing, and then drying, we enter the process that then leads the basil to become a semi-finished product.
Once the processing is finished we will have a semi-finished product that can have two different developments.
Be processed further up to the production of pesto or be stored in a cold room and processed afterwards.

After having worked the basil and obtained a semi-finished product, it will be necessary to follow the dedicated recipe of the pesto that is produced.
Then the pesto will be ready to be sold and finished on people’s tables to enrich their lunch or dinner.
The most important asset is nature that provides us with the raw materials that allow us to do the work we love.
To defend nature, we work in a limited area within Liguria and Northern Italy to avoid long shipments that would produce a lot of CO2.
